Caesar dressing can seem very mysterious, especially with the anchovies. But this recipe demonstrates how quite simple it truly is. The key to making the dressing is using quality ingredients. Here I’ve used Madagascar Black Pepper to add a subtle pepper flavor to the dressing, but garlic olive oil, lemon olive oil or any single varietal would also be great choices.
Ingredients
- 4 anchovies
- 1 tablespoon lemon juice
- 1 cup Parmesan cheese, freshly grated
- 1 teaspoon pepper
- ¾ cup Madagascar Black Pepper Olive This! Olive Oil
(or Garlic, Lemon or any single varietal olive oil) - 1 tablespoon Dijon mustard
- ¼ cup Olive This! Red Wine Vinegar
- 2 garlic cloves
Directions
Blend in a blender until well combined.
It keeps for a week in the refrigerator.
