Amy, our excellent sales associate, adapted this great recipe from Kiran Dodeja Smith incorporating our Blood Orange Olive Oil. After one taste, we had to share it! A couple of things we liked about it: (1) it’s simplicity – it doesn’t get easier than a no cook recipe, and (2) they’re snack treats that use more healthful ingredients than the typical saturated fats or high fructose corn syrup as sweeteners. There’s room to experiment with ingredients so use this recipe as a general guideline. Substituting our Lemon or Persian Lime Olive Oil is a great alternative as is chia seeds or bran for the flax seeds. This recipe is already doubled because we knew mom and dad would snack on them as much as the kids. This is also a good dessert option to bring to your next party. INGREDIENTS
- 1/3 cup Olive This! Blood Orange Olive Oil
- 1/3 cup honey
- 2 teaspoons vanilla extract
- 1 cup peanut butter
- 2 cups dry oatmeal
- 1 1/3 cups shredded coconut, unsweetened
- ½ cup ground flax seed (we used a coffee grinder)
In a medium bowl whisk together the blood orange olive oil, peanut butter, honey, and vanilla extract until well combined.
Fold in the oats, coconut and ground flax seed until well combined and chill in the fridge for about 1 hour.
Once chilled, press them into balls of desired size. We made these just under the size of a ping-pong ball but smaller bite-sized pieces also work well. You can store these in an airtight container for up to a week. Enjoy!
