Cornbread is a southern staple and whether it’s made with hominy in a cast iron skillet or if it comes out of a box, you might see it served with chili in the cooler months or as muffins at spring picnics. While there may be no replacing a classic iron skillet recipe, sometimes the convenience of a box mix at the last minute can be a savior. Elevate the simple box mix by using our Chipotle infused extra virgin olive oil. Remember our Easy Orange Fudge Brownies recipe that used our Blood Orange extra virgin olive oil to liven up a boxed mix? We whipped this up in a jiffy and it was gobbled up just as quickly. Easy and quick does not always mean you have to compromise flavor!
INGREDIENTS
- 1 box of your favorite cornbread mix
The following ingredient amounts are according to our package directions:
- 1 egg
- ¾ cup milk
- ½ cup Olive This! Chipotle Olive Oil
Prepare cornbread according to package directions substituting equal parts our Chipotle Olive Oil for the oil called for on the box. What follows is the preparation of the boxed mix we chose.
Preheat oven to 350 degrees F.
After measuring out the Infused Olive Oil for the cornbread mix, dip a brush into the measuring cup and coat the insides of your baking pan (we used an 8x8x2 inch baking pan).
Add the chipotle olive oil to the egg and ¾ cup of milk. Whisk to combine. Add dry ingredients from the box and stir until moistened.
Pour batter into your prepared baking pan. Bake until golden brown or until a toothpick inserted into the center of the cornbread comes out clean, about 35-40 minutes.
Serve warm with a pat of butter or instead, brush a light coat of chipotle olive oil over the finished cornbread before cutting. Enjoy!
