To kick off pumpkin season we’ve created these great little pumpkin energy balls. The recipe is really just a guideline. Feel free to add protein powder, hemp seeds, nuts (ground finely), flax seed, or even more chocolate.
This recipe was inspired by the blog Pinchofyum.com. She always has such great recipes.
Ingredients:
- 2 cups rolled oats
- 1/2 cup canned pumpkin puree
- 1/4 cup peanut butter (or almond butter)
- 1/4 cup chia seeds
- 1/4 cup pumpkin seeds
- 1 tsp cinnamon (or pumpkin pie spice)
- 1/2 cup Olive This! Vermont Maple Balsamic
- Generous pinch of salt
- 1/2 cup mini chocolate chips
Directions
Pulse everything together in a food processor except for the chocolate until combined. Then stir in the dark chocolate chips. Roll into small balls. Freeze until solid. Store in fridge or freezer.
