This sandwich is a fun quirky summer twist to the traditional BLT sandwich. We have subbed the tomato with sliced fresh strawberries. As an added twist this recipe comes from Jessica, our manager in Asheville and highlights fresh produce found in abundance right now from local farmers.
The strawberries are from Flying Cloud Farm, Goat Cheese from Three Graces Dairy, Lettuce from Full Sun Farm and fresh Sourdough whole wheat pita from Hominy Farms.
Ingredients
- 4 slices bread of choice
- 4-6 slices bacon, cooked
- 6-10 ripe strawberries, sliced approximately 1/4″ thick
- 6 lettuce leaves
- 2 tablespoons Strawberry Balsamic Whipped Goat Cheese (recipe below)
Directions
Toast your bread. We used a delicious sourdough whole wheat pita from Hominy Farm. Then spread each piece of toast with 1/2 tablespoon of Strawberry Balsamic Whipped Goat Cheese. Top two pieces of bread with strawberries, and the other two pieces with lettuce. Split the bacon slices between sandwiches, topping strawberries and breaking the bacon to fit as needed. Top bacon and strawberry toasts with the lettuce toasts and enjoy!
Makes 2 sandwiches
Strawberry Balsamic Whipped Goat Cheese
INGREDIENTS
- 2 tablespoons soft plain goat cheese (chevre) or cream cheese
- 1 1/2 teaspoon Olive This! Strawberry Balsamic Vinegar
DIRECTIONS
Let cheese soften at room temperature for about 10 minutes, then whip in the balsamic vinegar. It will last refrigerated up to 5 days.
