This delightful salad comes from Amy, our long-time team member at Olive This!. While on holiday she was served a version of this recipe and knew immediately that she could recreate it at home. We are certainly glad she did. The tropical sweet vinaigrette softens the sometimes bitter kale making for a refreshing and healthy salad.
Ingredients
- 6 cups of kale, chopped (stems removed)
- 1 mango, diced into approximately 1/2 inch cubes
- 1/2 cup shredded, unsweetened coconut
- 1/2 cup chopped Macadamia nuts
- 1/4 cup Olive This! Persian Lime Olive Oil
- 1/4 cup Olive This! Coconut Balsamic White Vinegar
Directions
Mix the kale, mango, coconut and nuts in a large bowl and set aside. Stir the olive oil and vinegar together. Add salt and pepper to taste. Pour the vinaigrette over the salad and toss to coat all ingredients.
If desired, leave the salad to set for 30-60 minutes to soften the kale. Enjoy!
