Remember how easy it was to make our Smashed Potatoes? Well here’s something very similar and it’s just as easy to prepare. Even if you’re not a cabbage fan, you might just love this healthy alternative on Saint Patrick’s Day. Just a few simple ingredients with roasted cabbage brings out a sweet nutty flavor that you’ll enjoy any time of year. Throw them on the grill as a side dish with burgers or steaks!
INGREDIENTS
- 1 large head of green cabbage
- about 4-5 tablespoons Olive This! Garlic Olive Oil
- kosher salt
- freshly ground black pepper
- red pepper flakes, optional (not pictured above)
DIRECTIONS
Preheat oven to 400 degrees F.
Cut the cabbage in half through the core. Remove the core as a wedge from each half. With the cut side down, cut into six wedges (see photo above). Repeat for the other half of the cabbage head.
Drizzle about 2 tablespoons of olive oil on a rimmed baking sheet. Place the cabbage wedges, evenly spaced, on the baking sheet. Drizzle more olive oil liberally over the wedges.
Add kosher salt, freshly ground black pepper and red pepper flakes (if using) to taste.
Roast in oven until cabbage softens and edges brown and begin to crisp, about 30-40 minutes depending on how thick your slices are. Drizzle additional oil and season to taste with salt and pepper. Serve the roasted cabbage immediately.
